CRISPY LEMON PEPPER FISH BITES

INGREDIENTS
1 pound cod fillets (or any white fish fillet such as hake, pollock, or haddock), thawed, if frozen
1 cup panko bread crumbs
1 tablespoon freshly grated lemon zest
1 teaspoon dried parsley
1 teaspoon cracked black pepper
21 teaspoon salt
21 Half Stick (1/4 cup) Butter with Olive Oil & Sea Salt melted
1 tablespoon fresh lemon juice
INSTRUCTIONS
Heat oven 450°F. Line large baking sheet with aluminum foil. Place metal cooling rack on top of baking sheet. Spray cooling rack with no-stick cooking spray; set aside. 2. Cut fish into bite-sized (2x1-inch) pieces. Pat fish bites dry with paper towel. 3. Combine bread crumbs, lemon zest, parsley, pepper and salt in shallow bowl; mix well. 4. Stir together melted butter and lemon juice in another shallow bowl. 5. Dip each fish bite into melted butter and lemon juice; then into bread crumb mixture, coating all sides of fish and shaking off excess. Place coated fish bites onto prepared cooling rack. 6. Bake fish bites 12-14 minutes or until fish flakes easily with fork.
