"Hake is a close relative to the cod and haddock families. They are a hearty fish, often living up to 1000 feet below the surface. The hake is firmer than haddock and other flakey white fish so the filet can hold up to higher heat preparations such as pan seared, grilled or roasted. It's excellent deep fried or poached. The subtle flavor of hake works well with rich flavorful sauces. Hake is translucent when raw and white when fully cooked."
